Ingredients

  • 16 oz 450g full-fat or 2% cottage cheese (Good Culture 4% small curd recommended)

Optional Add-ins for Flavor:

  • 1 tbsp olive oil for savory
  • 1/2 tsp garlic powder or onion powder
  • 1 tbsp maple syrup or honey for sweet
  • 1/2 tsp cocoa powder for chocolate version
  • Fresh berries berry jam, or pesto for toppings

Instructions

  • Add cottage cheese to a food processor, high-speed blender, or immersion blender.
  • Blend on high for 30 seconds to 1 minute until the texture is smooth and fluffy.
  • Scrape down the sides if needed, and blend again briefly to make sure it’s evenly whipped.
  • Transfer to a serving bowl. Serve immediately with toppings or refrigerate in an airtight container for up to 2 days.
  • Stir before serving if storing, to revive the fluffy texture.

Notes

  • For the creamiest results, use full-fat or 2% cottage cheese.
  • Low-fat versions work but may not be as rich or fluffy.
  • Best enjoyed fresh. Freezing is not recommended as it can change the texture.
