Ingredients

  • - 1 cup full-fat Greek yogurt
  • - 1 medium cucumber grated and drained
  • - 1 tablespoon extra virgin olive oil
  • - 1 tablespoon lemon juice freshly squeezed
  • - 1 garlic clove finely minced
  • - 1 tablespoon fresh dill chopped
  • - 1 tablespoon fresh mint chopped
  • - 1/2 teaspoon salt or to taste

Instructions

  • Grate the cucumber using a box grater. Use the large holes to retain texture.
  • Squeeze out as much water as possible using a clean towel or paper towels.
  • In a bowl, combine Greek yogurt, cucumber, olive oil, lemon juice, garlic, dill, mint, and salt.
  • Mix until smooth and well-combined. Chill for at least 30 minutes for best flavor.

Notes

- For extra tang, add a splash of white vinegar.
- Store in an airtight container in the fridge for up to 3 days.
- You can substitute fresh herbs with dried—use half the quantity.
- For a thicker sauce, use strained yogurt or hang your yogurt in cheesecloth before mixing.
