Ingredients
  

  • 1 packet 2 ¼ tsp Active Dry Yeast (or 1 ¾ tsp Instant Yeast)
  • 1 cup warm milk scalded, then cooled to lukewarm
  • ¼ cup honey
  • 4 tbsp melted butter plus more for brushing
  • 1 egg
  • 1 tsp salt
  • 4 cups all-purpose or bread flour 480 grams, measured correctly

Instructions
 

  • Scald the Milk:
  • Heat milk until steaming (not boiling). Remove from heat and let it cool until warm but not hot.
  • Activate the Yeast:
  • In a bowl, combine warm milk, honey, and yeast. Let it sit for 5-10 minutes until foamy.
  • Mix the Dough:
  • Add melted butter, egg, salt, and flour to the yeast mixture. Stir until combined.
  • Knead the Dough:
  • Knead for 8-10 minutes until smooth and elastic. If using a bread machine, use the dough setting.
  • First Rise:
  • Place dough in a greased bowl, cover, and let it rise for 1 hour or until doubled.
  • Shape the Rolls:
  • Roll out dough to ½ inch thick, fold it over, and cut into 2-inch squares.
  • Second Rise:
  • Place rolls on a greased baking sheet, cover, and let them rise for 30-45 minutes.
  • Bake:
  • Preheat oven to 350°F. Bake for 12-15 minutes until golden brown.
  • Brush with Butter:
  • Immediately brush warm rolls with melted butter. Serve warm with honey butter.
