Ingredients
For the Prime Rib:

bone-in prime rib roast
7 lbs
For the Marinade:

kosher salt

black pepper

granulated sugar

liquid smoke

soy sauce

minced garlic
Instructions
Day 1: Whisk marinade ingredients in a bowl. Cover and refrigerate overnight.
Day 2: Place roast on a rack in a roasting pan. Coat with marinade on all sides. Refrigerate uncovered for 24 hours.
Day 3:
Let roast sit at room temperature for 2 hours.
Preheat oven to 450°F (232°C).
Sear roast for 30 minutes.
Reduce heat to 250°F (121°C) and cook for 2–2.5 hours (until internal temp reaches 130°F for medium-rare).
Rest for 1 hour before slicing.
Notes
For extra smokiness:
Add 1 tsp smoked paprika to the marinade.
Don’t skip resting!
