Spicy Chickpea Tacos

Ingredients

For the Spicy Chickpeas:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Pinch of cayenne pepper optional
  • Salt and pepper to taste

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 avocado sliced or mashed
  • ½ red onion finely diced
  • Fresh cilantro chopped (¼ cup)
  • 1 lime cut into wedges
  • ¼ cup sour cream or vegan alternative optional

Instructions

Step 1: Prep Chickpeas

  • Drain, rinse, and pat chickpeas dry.

Step 2: Cook Chickpeas

  • Heat olive oil in a skillet over medium heat. Add chickpeas and cook for 5-7 minutes, stirring occasionally.

Step 3: Add Spices

  • Add smoked paprika, chili powder, cumin, garlic powder, cayenne, salt, and pepper. Stir to coat and cook for another 2-3 minutes.

Step 4: Warm Tortillas

  • Warm tortillas in a skillet or over an open flame for a few seconds on each side.

Step 5: Assemble Tacos

  • Fill each tortilla with spiced chickpeas. Top with avocado, red onion, cilantro, and lime. Add sour cream if desired.

Notes

  • Adjust Spice Level: Modify cayenne for more or less heat.
  • Gluten-Free Option: Use corn tortillas.
  • Storage: Store leftover chickpeas in an airtight container in the fridge for up to 3 days.
