Ingredients

  • 1.5 lbs boneless skinless chicken thighs or breasts
  • 4 cups chicken broth
  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 1 cup black beans drained and rinsed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper optional
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro chopped
  • Salt and black pepper to taste

Instructions

  • Place the chicken breasts or thighs in the slow cooker.
  • Add chicken broth, fire-roasted diced tomatoes, black beans, diced onion, minced garlic, cumin, chili powder, and cayenne pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours, or until the chicken is tender.
  • Remove the chicken from the slow cooker and shred it using two forks.
  • Return the shredded chicken to the slow cooker. Add lime juice and chopped cilantro. Stir well.
  • Taste and adjust seasoning with salt and black pepper as needed.
  • Serve hot with your favorite toppings, such as avocado, tortilla strips, or shredded cheese.

  • For a creamier texture, blend a portion of the soup and mix it back in.
