Ingredients

  • 4 boneless skinless chicken thighs
  • 1.5 lbs Yukon gold potatoes cut into chunks
  • 4 garlic cloves minced
  • 1 medium onion diced
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp fresh rosemary or 1/2 tsp dried
  • 1 tsp thyme or 1/2 tsp dried
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Prepare Ingredients:

  • Chop potatoes, dice onions, and mince garlic.

Layer in Slow Cooker:

  • Add potatoes to the bottom, followed by onion and garlic. Place chicken thighs on top.

Season and Add Broth:

  • Sprinkle paprika, rosemary, thyme, salt, and pepper. Pour chicken broth evenly over ingredients.

Cook:

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.

Serve:

  • Garnish with fresh parsley and enjoy with a side salad or steamed vegetables.

Notes

For a deeper flavor, sear the chicken thighs in a skillet with a bit of oil before adding them to the slow cooker.
Feel free to substitute Yukon gold potatoes with red potatoes or even sweet potatoes for a different twist.
Add vegetables like carrots or celery for more variety.
Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
