Ingredients

  • 1 lb Italian sausage mild or spicy
  • 4 cups chicken broth
  • 1 can 14.5 oz crushed tomatoes
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes optional
  • 2 cups cheese tortellini fresh or frozen
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese plus extra for garnish
  • Salt and pepper to taste

Instructions

Brown the Sausage:

  • In a skillet over medium heat, cook the Italian sausage until browned. Drain any excess fat and transfer the sausage to the crockpot.

Assemble Ingredients:

  • Add chicken broth, crushed tomatoes, onion, garlic, dried basil, oregano, thyme, and red pepper flakes to the crockpot. Stir to combine.

Cook Low and Slow:

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, allowing the flavors to meld together.

Add Tortellini and Spinach:

  • About 30 minutes before serving, stir in the tortellini and spinach. Let the tortellini cook until tender, and the spinach wilts.

Finish with Cream:

  • Stir in heavy cream and season with salt and pepper to taste.

Serve:
