Instructions
Brown the Sausage:
In a skillet over medium heat, cook the Italian sausage until browned. Drain any excess fat and transfer the sausage to the crockpot.
Assemble Ingredients:
Add chicken broth, crushed tomatoes, onion, garlic, dried basil, oregano, thyme, and red pepper flakes to the crockpot. Stir to combine.
Cook Low and Slow:
Cover and cook on low for 4-6 hours or on high for 2-3 hours, allowing the flavors to meld together.
Add Tortellini and Spinach:
About 30 minutes before serving, stir in the tortellini and spinach. Let the tortellini cook until tender, and the spinach wilts.
Finish with Cream:
Stir in heavy cream and season with salt and pepper to taste.
Serve:
Ladle the soup into bowls, garnish with grated Parmesan cheese, and enjoy!
Notes
Freezing Tip
: If freezing, avoid adding the tortellini and heavy cream until reheating to maintain the best texture.
Spice Levels
: Add more red pepper flakes for a spicy kick or omit them for a milder flavor.
Light Option
: Substitute heavy cream with half-and-half for a lighter version.
