Let the frozen watermelon cubes sit at room temperature for 5-10 minutes to soften slightly.
Add watermelon, 2 tablespoons of maple syrup, lime juice, mint or basil, and water to a high-speed blender.
Pulse a few times to break up the fruit, then blend until smooth and slushy.
Taste and adjust sweetness by adding more maple syrup if needed. If it’s too thick, add a splash more water.
Pour into chilled glasses, garnish with lime wedges or mint sprigs, and enjoy immediately!
