  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Coconut Filling:

  • 1 can 14 ounces sweetened condensed milk
  • 2 cups sweetened shredded coconut
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 1 ½ cups semisweet chocolate chips

Instructions
 

Prepare Your Tools:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.

Mix the Chocolate Cake:

  • Sift flour, sugar, cocoa, baking powder, baking soda, and salt into a large bowl.
  • Combine eggs, milk, oil, and vanilla, then mix into dry ingredients until smooth.
  • Gradually add boiling water, mixing until the batter is well combined.

Bake the Cake:

  • Distribute batter evenly between prepared pans.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Allow cakes to cool in pans, then transfer to wire racks.

Prepare the Coconut Filling:

  • In a bowl, thoroughly mix condensed milk, coconut, and vanilla.

Make the Chocolate Ganache:

  • Heat cream to just before boiling, then pour over chocolate chips.
  • Let sit for a few minutes before stirring until smooth.

Assemble the Cake:

  • Place one cake layer on a serving plate. Spread the coconut filling on top.
  • Add the second cake layer and pour the ganache over the top, allowing it to drip down the sides.
