Ingredients

For the Salad:

  • 1 head iceberg lettuce chopped
  • ½ red onion thinly sliced
  • ½ cup pepperoncini peppers chopped
  • 1 cup cherry tomatoes diced
  • 1 cup cucumbers diced
  • 10 slices salami chopped
  • 8 slices deli turkey Applegate brand, chopped
  • 8 slices deli ham chopped
  • 4 slices provolone cheese chopped

For the Dressing:

  • cup mayonnaise
  • cup plain non-fat Greek yogurt
  • 1 tbsp red wine vinegar
  • 2 tbsp pepperoncini juice
  • cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  • In a large bowl, combine chopped lettuce, red onion, pepperoncini, tomatoes, cucumbers, salami, turkey, ham, and provolone cheese.
  • In a separate bowl or jar, whisk together mayonnaise, Greek yogurt, red wine vinegar, pepperoncini juice, parmesan cheese, garlic powder, oregano, salt, and pepper until smooth.
  • Pour the dressing over the salad ingredients.
  • Toss everything together until evenly coated.
  • Serve immediately and enjoy!
