Ingredients

Hot Honey:

  • 1/3 cup honey
  • 1 1/2 tsp hot sauce e.g., Frank's or Cholula
  • 3/4 tsp chili flakes

Chicken:

  • 2 large chicken breasts about 250g each, halved horizontally
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 cup plain flour
  • 2 eggs beaten
  • 1 cup Panko breadcrumbs
  • 6 –8 tbsp vegetable oil for frying
  • 200 g 7oz feta cheese, crumbled

Instructions

Make the Hot Honey:

  • In a bowl, mix honey, hot sauce, and chili flakes. Microwave for 20–30 seconds or warm on the stove until just heated. Stir and let cool.

Prepare Chicken:

  • Slice each chicken breast horizontally to create 4 even pieces. In a small bowl, combine all spices for seasoning.

Bread the Chicken:

  • Set up three dishes: flour with half the seasoning, egg, and Panko with the remaining seasoning. Dredge chicken in flour, dip in egg, then coat thoroughly in breadcrumbs.

Fry the Chicken:

  • In a skillet over medium-high heat, heat oil until shimmering. Fry chicken 3–4 minutes per side or until golden and cooked through. Set on a wire rack.

Add Feta & Broil:

  • Top each piece with crumbled feta. Place under the broiler for 2–4 minutes until feta is golden and melty.

Drizzle & Serve:

  • Drizzle with warm hot honey and serve hot with sides like arugula or potato wedges.

Notes

  • Adjust Heat: Increase chili flakes or hot sauce if you want more kick.
  • Baking Option: Toast breadcrumbs first, then bake chicken at 430°F for 10 mins, flip and bake 8–10 more. Continue with feta and broiling.
  • Storage: Store leftover hot honey in an airtight jar in the fridge. Reheat chicken in the oven for crispiness.
