In a bowl, mix honey, hot sauce, and chili flakes. Microwave for 20–30 seconds or warm on the stove until just heated. Stir and let cool.
Prepare Chicken:
Slice each chicken breast horizontally to create 4 even pieces. In a small bowl, combine all spices for seasoning.
Bread the Chicken:
Set up three dishes: flour with half the seasoning, egg, and Panko with the remaining seasoning. Dredge chicken in flour, dip in egg, then coat thoroughly in breadcrumbs.
Fry the Chicken:
In a skillet over medium-high heat, heat oil until shimmering. Fry chicken 3–4 minutes per side or until golden and cooked through. Set on a wire rack.
Add Feta & Broil:
Top each piece with crumbled feta. Place under the broiler for 2–4 minutes until feta is golden and melty.
Drizzle & Serve:
Drizzle with warm hot honey and serve hot with sides like arugula or potato wedges.
Notes
Adjust Heat: Increase chili flakes or hot sauce if you want more kick.
Baking Option: Toast breadcrumbs first, then bake chicken at 430°F for 10 mins, flip and bake 8–10 more. Continue with feta and broiling.
Storage: Store leftover hot honey in an airtight jar in the fridge. Reheat chicken in the oven for crispiness.
