Ingredients

  • 2 cups cooked shredded boneless, skinless chicken breasts
  • 2 cups grated or julienned carrots
  • 1 cup chopped celery
  • 1/2 cup thinly sliced red onion
  • 1/2 cup Greek yogurt for dressing
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley optional

Instructions

Prepare the Chicken:

  • Cook chicken breasts by grilling, baking, or poaching. Shred or chop the chicken into small pieces once cooked and slightly cooled.

Prepare Vegetables:

  • Grate the carrots, dice the celery, and slice the red onion. Wash and chop parsley or green onions.

Mix Salad:

  • In a large bowl, combine the shredded chicken, grated carrots, celery, onion, and parsley.

Make Dressing:

  • In a small bowl, mix the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.

Toss the Salad:

  • Pour the dressing over the salad ingredients and toss gently until everything is well-coated and evenly mixed.
