- 1/4 cup olive oil
- Juice of 2 lemons
- 4 garlic cloves minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes optional
- 8 lamb chops rib or loin cuts preferred
Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, black pepper, and red pepper flakes.
Marinate the Lamb: Place the lamb chops in a zip-top bag or dish and pour the marinade over them. Refrigerate for at least 4 hours or overnight.
Preheat the Grill: Set your grill to medium-high heat (450-500°F) and lightly oil the grates.
Grill the Lamb Chops: Remove the lamb from the marinade and let excess drip off. Grill for 3-4 minutes per side for medium-rare or up to 6 minutes for medium.
Rest and Serve: Remove from the grill and let rest for 5 minutes before serving. Enjoy with tzatziki, Greek salad, or lemon potatoes.
- Don’t over-marinate! The acidity from the lemon can break down the meat if left too long.
- Use a meat thermometer: 130°F for medium-rare, 140°F for medium.
- No grill? Sear the chops in a hot cast-iron skillet for 3-4 minutes per side.
