Grilled Chicken Broccoli Bowls With Creamy Garlic Sauce

Ingredients

For the Chicken:

  • 6 bone-in skin-on chicken thighs
  • ½ tbsp olive oil
  • ½ tbsp paprika
  • ½ tbsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of 1 lemon

For the Rice:

  • 1 cup jasmine rice
  • 2 cups chicken broth or water + extra salt
  • 1 bay leaf

For the Broccoli:

  • 1 large head of broccoli cut into florets

For the Garlic Sauce:

  • 2 cups full-fat Greek yogurt
  • 2 garlic cloves grated
  • 1 tbsp olive oil
  • Juice of 1 lemon or 1 tbsp pickle brine
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh parsley optional

For the Salad (Optional):

  • 1 English cucumber chopped
  • 250 g cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 shallot thinly sliced
  • 100 g feta cheese crumbled

Salad Dressing (Optional):

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Pinch of dried oregano
  • Salt and pepper to taste

Instructions

  • Marinate Chicken: In a large bowl, mix olive oil, paprika, garlic powder, salt, pepper, and lemon juice. Add chicken and toss to coat. Let marinate 30 minutes.
  • Cook the Rice: Rinse rice. In a pot, combine rice, chicken broth, and bay leaf. Bring to boil, reduce heat, cover, and simmer 15 minutes or until fluffy.
  • Grill Chicken: Heat an oven-proof skillet over medium. Add chicken skin-side down. Cook until golden and crisp, then flip and cook through.
  • Steam Broccoli: Steam broccoli florets until bright green and tender-crisp, about 5 minutes.
  • Make Garlic Sauce: In a medium bowl, combine Greek yogurt, garlic, lemon juice or pickle brine, olive oil, salt, pepper, and parsley. Stir well.
  • Make Salad (Optional): Combine cucumber, tomato, bell pepper, shallot, and feta in a bowl. Toss with your favorite homemade dressing.
  • Assemble Bowls: Add rice to a bowl. Top with sliced grilled chicken and steamed broccoli. Drizzle with garlic sauce. Serve with salad if using.

Notes

  • No chicken broth? Use water and a pinch of extra salt.
  • Store extra garlic sauce in the fridge for up to 2 weeks.
  • Boneless chicken works too—reduce cooking time slightly.
  • Pickle brine adds a zesty flavor to the sauce if you’re out of lemon.
