Ingredients

  • 6 Hatch green chiles roasted and peeled
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cups chicken broth
  • 1 can 14.5 oz diced tomatoes
  • Salt and pepper to taste
  • Optional garnishes: fresh cilantro shredded cheese, sliced avocado, sour cream

Instructions

  • Roast green chiles at 400°F (200°C) for 15-20 minutes. Steam, peel, deseed, and chop.
  • Sear chicken in olive oil until golden brown. Remove and set aside.
  • Sauté onions and garlic, then add broth, tomatoes, and chiles.
  • Return chicken to the pot, add spices, and simmer for 30-45 minutes.
  • Adjust seasoning and serve with garnishes of choice.

Use fresh Hatch chiles for authentic flavor.
Adjust chile quantity to modify spice level.
