Ingredients

For the Green Beans:

  • 1 lb fresh green beans trimmed and cut into 1-inch pieces
  • Salt for blanching water

For the Creamy Mushroom Sauce:

  • 2 tbsp olive oil
  • 8 oz mushrooms sliced (button, cremini, or shiitake)
  • 2 cloves garlic minced
  • 2 tbsp gluten-free flour or cornstarch
  • 1 ½ cups unsweetened plant-based milk almond, oat, or cashew
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of nutmeg optional

For the Crispy Topping:

  • 1 large onion thinly sliced
  • ½ cup gluten-free breadcrumbs or crushed gluten-free crackers
  • 1 tbsp olive oil
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

Blanch the Green Beans:

  • Boil a large pot of salted water. Add the green beans and blanch for 2-3 minutes.
  • Drain and transfer the beans to an ice bath to stop cooking. Set aside.

Make the Creamy Mushroom Sauce:

  • Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until golden (5-7 minutes).
  • Stir in minced garlic and cook for 1 minute. Sprinkle gluten-free flour over the mushrooms and stir.
  • Gradually pour in plant-based milk, whisking constantly until the sauce thickens. Season with salt, pepper, and nutmeg.

Prepare the Crispy Topping:

  • Preheat the oven to 400°F (200°C).
  • Toss sliced onions with gluten-free breadcrumbs, olive oil, garlic powder, and salt.
  • Spread on a baking sheet and bake for 15-20 minutes until golden and crispy.

Assemble the Casserole:

  • In a baking dish, combine the blanched green beans and creamy mushroom sauce.
  • Top with crispy onions.

Bake:

  • Bake at 400°F for 20 minutes until bubbly and golden.

  • Let cool slightly before serving.
