Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 8 oz cremini or button mushrooms sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1/4 cup chicken broth
  • Salt and black pepper to taste
  • Fresh parsley optional, for garnish

Instructions
 

Prepare the chicken:

  • Cut the chicken into bite-sized pieces and season with salt and black pepper.

Cook the chicken:

  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden and fully cooked, about 5-7 minutes. Remove the chicken and set aside.

Sauté the mushrooms:

  • In the same skillet, add the sliced mushrooms. Cook until tender and lightly browned, about 3-4 minutes.

Make the garlic butter sauce:

  • Reduce the heat to medium. Melt the butter in the skillet and add the minced garlic. Cook for 1 minute, stirring constantly.

Combine:

  • Add the chicken broth to the skillet, scraping the bottom to deglaze. Simmer for 2-3 minutes until the sauce thickens slightly.

Finish the dish:

  • Return the chicken to the skillet and toss to coat in the sauce. Cook for 1-2 more minutes until warmed through.

Garnish and serve:

  • Sprinkle with fresh parsley, if desired, and serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the garlic butter sauce.
  • You can substitute chicken breasts for thighs if preferred, but thighs offer more juiciness.
  • Serve with rice, pasta, or crusty bread to soak up the delicious sauce.
