  • 1 ½ lbs sirloin steak cut into bite-sized pieces
  • 1 lb Yukon Gold potatoes diced into ½-inch cubes
  • 4 cloves garlic minced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp dried rosemary
  • ½ tsp dried oregano

Instructions
 

  • Prepare Ingredients: Pat the steak dry and season with salt and pepper. Dice potatoes into uniform pieces for even cooking.
  • Cook the Potatoes: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the potatoes, season with a pinch of salt, and cook for 10 minutes, stirring occasionally, until golden brown. Remove from pan and set aside.
  • Sear the Beef: In the same pan, add 1 tbsp olive oil and 1 tbsp butter. Place steak bites in a single layer and sear for 2-3 minutes per side until browned.
  • Add Garlic Butter: Reduce heat to medium-low, add the remaining butter and minced garlic. Stir for 30 seconds until fragrant.
  • Combine and Serve: Return the potatoes to the pan, sprinkle with rosemary and oregano, and toss everything together. Cook for another 2 minutes to meld flavors. Serve immediately.

Notes

  • For extra flavor: Add a splash of Worcestershire sauce or soy sauce to the beef before cooking.
  • For a slow cooker version: Sear the steak first, then add all ingredients to a slow cooker and cook on LOW for 6 hours or HIGH for 3-4 hours.
