Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan with butter or non-stick spray.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream together the softened butter, white sugar, and brown sugar until fluffy.
  • Add the eggs, one at a time, followed by the vanilla extract, and mix until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • In a small bowl, mix the cinnamon and sugar for the topping.
  • Spread the batter evenly in the prepared pan and sprinkle the cinnamon-sugar mixture on top.
  • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  • Let the blondies cool in the pan before cutting into squares and serving.

- For a chewier texture, add an extra egg yolk or more brown sugar.
