- 2 cups cottage cheese full-fat recommended
- ½ cup parmesan cheese grated or shredded
- ½ cup milk any type
- 1 tbsp butter or olive oil
- ½ onion finely chopped
- 3 cloves garlic minced
- 12 oz chickpea pasta or preferred pasta
- ½ tsp salt
- ½ tsp black pepper
Cook the Pasta – Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain and set aside.
Sauté Onions & Garlic – Melt butter in a pan over medium heat. Sauté onions and garlic for 4-5 minutes until soft and fragrant.
Blend the Sauce – In a blender, combine cottage cheese, parmesan, milk, salt, pepper, and the sautéed onions and garlic. Blend until smooth.
Mix with Pasta – Let pasta cool for a few minutes before mixing in the sauce. Toss until fully coated. If needed, warm on low heat.
Serve & Enjoy – Top with extra parmesan, fresh black pepper, or red pepper flakes for a kick. Serve immediately.
- Let the pasta cool slightly before adding the sauce to prevent separation.
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in 30-second bursts in the microwave, stirring in between.
- Customize by adding grilled chicken, steamed broccoli, or a spicy kick with red pepper flakes.
