Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 tablespoon melted coconut oil
  • ½ cup milk dairy or non-dairy

Instructions

  • Blend cottage cheese, eggs, vanilla, maple syrup, milk, and melted coconut oil until smooth.
  • In a separate bowl, whisk together flour and baking powder.
  • Pour the blended wet ingredients into the dry ingredients and stir gently.
  • Preheat and grease the waffle iron.
