- 1 cup cottage cheese
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 1 cup flour all-purpose or whole wheat
- 1 teaspoon baking powder
- 1 tablespoon melted coconut oil
- ½ cup milk dairy or non-dairy
Blend cottage cheese, eggs, vanilla, maple syrup, milk, and melted coconut oil until smooth.
In a separate bowl, whisk together flour and baking powder.
