Cottage Cheese Quiche

Ingredients

  • 6 large eggs
  • ¾ cup 2% cottage cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ cup shredded cheddar cheese divided
  • ½ cup cooked and crumbled bacon
  • 2 tablespoons chopped green onions
  • Cooking spray or olive oil for greasing

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or olive oil.
  • In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth and creamy.
  • Pour the egg mixture into a bowl. Stir in ½ cup shredded cheddar cheese, bacon, and green onions.
  • Pour the mixture into the prepared pie dish. Sprinkle the remaining ¼ cup cheddar cheese evenly on top.
  • Bake for 25–28 minutes, or until the center is just set and the top is golden.
  • Remove from the oven and let the quiche cool for 5 minutes before slicing.

Notes

  • For extra protein, add cooked sausage or diced ham.
  • To make it vegetarian, skip the bacon and add sautéed mushrooms or spinach.
  • Quiche will puff while baking and settle once cooled.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the microwave for 30 seconds or in the oven at 350°F until warmed through.
