Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or olive oil.
In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth and creamy.
Pour the egg mixture into a bowl. Stir in ½ cup shredded cheddar cheese, bacon, and green onions.
Pour the mixture into the prepared pie dish. Sprinkle the remaining ¼ cup cheddar cheese evenly on top.
Bake for 25–28 minutes, or until the center is just set and the top is golden.
Remove from the oven and let the quiche cool for 5 minutes before slicing.
