Ingredients
  

  • 2 cups cottage cheese
  • 1 8 oz tub Cool Whip, thawed
  • 1 small box 3 oz strawberry or orange Jello powder (dry, not prepared)
  • 1 can 20 oz crushed pineapple, drained
  • Optional Add-ins:
  • 1 cup mini marshmallows
  • ½ cup chopped pecans or walnuts
  • ½ cup sliced fresh strawberries or mandarin oranges

Instructions
 

  • Mix the base – In a large mixing bowl, combine the cottage cheese, drained crushed pineapple, and dry Jello powder. Stir until well combined.
  • Fold in Cool Whip – Gently fold in the Cool Whip until the mixture becomes light and fluffy. Avoid overmixing to keep the texture airy.
  • Chill – Transfer the mixture to a serving dish, cover it, and refrigerate for at least 1 hour (or overnight for the best texture).
  • Serve & enjoy – Scoop onto plates, serve in dessert cups, or eat straight from the bowl!

Notes

  • Drain pineapple well to prevent the salad from becoming too watery.
  • Try different Jello flavors like raspberry, cherry, or lime for variety.
  • Best served chilled and eaten within 1-2 days for the freshest taste.
  • For a richer texture, use homemade whipped cream instead of Cool Whip.
