Ingredients

  • 1 cup full-fat cottage cheese
  • 1/3 cup dark chocolate chips or chopped chocolate bar
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons sweetener optional: maple syrup, honey, monkfruit, etc.

Instructions

  • Line a loaf pan with parchment paper, allowing some paper to hang over the sides for easy removal.
  • Blend the cottage cheese in a high-speed blender or food processor until completely smooth.
  • In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  • In a separate mixing bowl, combine the melted chocolate, blended cottage cheese, vanilla extract, and sweetener if using. Stir until fully mixed.
  • Pour the mixture into the prepared pan, spread it evenly, and place it in the freezer for 1–2 hours until set.
  • Once firm, lift the fudge out using the parchment paper and slice into squares. Store in the freezer until ready to enjoy.

  • Optional add-ins include nuts, seeds, peppermint extract, or a swirl of peanut butter.
