In a separate mixing bowl, combine the melted chocolate, blended cottage cheese, vanilla extract, and sweetener if using. Stir until fully mixed.
Pour the mixture into the prepared pan, spread it evenly, and place it in the freezer for 1–2 hours until set.
Once firm, lift the fudge out using the parchment paper and slice into squares. Store in the freezer until ready to enjoy.
