This easy cottage cheese flatbread is soft, high-protein, gluten-free, and low-carb. Made with just two ingredients, it’s perfect for wraps, sandwiches, or as a pizza crust.

- 1 cup cottage cheese full-fat, low-fat, or fat-free
- 2 large eggs
- ¾ teaspoon garlic powder optional
- 1 teaspoon Italian seasoning optional
- Cooking spray for baking sheet
Preheat oven to 350°F (176°C).
In a blender or food processor, blend cottage cheese and eggs until smooth.
Add seasonings of choice (garlic powder, Italian seasoning, etc.) and mix well.
Line a baking sheet with parchment paper and lightly spray with oil.
Pour the mixture onto the sheet and spread evenly into a thin layer.
Bake for 30-35 minutes, or until edges are golden brown.
Let it cool completely before removing it from the parchment paper.
Use as a wrap, pizza crust, or pita bread substitute!
- For a thicker, chewier flatbread, bake for up to 50 minutes.
- If making thin wraps, check at 25-30 minutes to avoid overbaking.
- Store in an airtight container in the fridge for up to 5 days.
- Freeze between parchment paper layers for up to a month.
- Reheat in a dry pan or oven at 350°F for a crispier texture.
