In a large mixing bowl, combine cottage cheese and self-rising flour. Stir until a dough forms. If sticky, lightly flour your hands and knead.
Transfer the dough onto the prepared baking sheet. Use a rolling pin to shape it into a rectangle about ½ inch thick.
If using, sprinkle shredded cheddar cheese over the top for extra flavor.
Bake for 20-25 minutes, or until the top is golden brown and firm.
Let it cool for a few minutes before slicing. Enjoy warm or at room temperature!
