- 3 ripe bananas mashed
- 2 large eggs
- 1/2 cup full-fat cottage cheese
- 1/4 cup maple syrup adjust for sweetness
- 1 tsp vanilla extract
- 2 1/4 cups almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Optional: 1/2 cup chocolate chips walnuts, or blueberries
Preheat the oven to 350°F. Line a loaf pan with parchment paper and grease it.
In a large bowl, mash the bananas until smooth.
Add the eggs, cottage cheese, maple syrup, and vanilla extract. Mix well.
Stir in the almond flour, baking soda, and cinnamon until fully combined.
Pour the batter into the prepared loaf pan.
Bake for 50 minutes, covering with foil after 30 minutes if the top browns too quickly.
Check for doneness with a toothpick—it should come out clean or with a few crumbs.
