Ingredients
  

  • 3 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup full-fat cottage cheese
  • 1/4 cup maple syrup adjust for sweetness
  • 1 tsp vanilla extract
  • 2 1/4 cups almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Optional: 1/2 cup chocolate chips walnuts, or blueberries

Instructions
 

  • Preheat the oven to 350°F. Line a loaf pan with parchment paper and grease it.
  • In a large bowl, mash the bananas until smooth.
  • Add the eggs, cottage cheese, maple syrup, and vanilla extract. Mix well.
  • Stir in the almond flour, baking soda, and cinnamon until fully combined.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50 minutes, covering with foil after 30 minutes if the top browns too quickly.
  • Check for doneness with a toothpick—it should come out clean or with a few crumbs.
  • Let the bread cool before slicing. Enjoy!

Notes

  • Store at room temp for 3 days, in the fridge for 5 days, or freeze for up to 2 months.
  • For extra sweetness, add an extra tablespoon of maple syrup or mix in chocolate chips.
  • Use the ripest bananas possible for the best flavor and moisture.
