Ingredients

  • 6 cups mixed lettuce romaine + leafy greens
  • 1 cup cooked chicken breast chopped
  • 4 strips bacon oven-cooked and chopped
  • 2 hard-boiled eggs sliced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/3 cup crumbled blue cheese Roquefort or Gorgonzola
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 minced garlic clove
  • Salt and pepper to taste

Instructions

  • In a large bowl or platter, spread the chopped lettuce as your base.
  • Arrange the chicken, bacon, eggs, tomatoes, avocado, and blue cheese in rows or sections over the greens.
  • Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to create the vinaigrette.
  • Drizzle dressing over the salad right before serving.
  • Toss gently if desired or serve with dressing on the side.
