Breakfast Sausage Casserole

Ingredients
  

  • 1 lb breakfast sausage
  • 10 large eggs
  • 1 cup milk
  • ½ cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 small onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat the oven to 375°F. Grease a 9x13-inch baking dish.
  • Cook the sausage in a skillet over medium heat, breaking it into crumbles. Drain excess grease and set aside.
  • In the same pan, sauté diced onions and bell peppers until softened.
  • In a large bowl, whisk together eggs, milk, sour cream, salt, pepper, and garlic powder.
  • Layer cooked sausage, sautéed veggies, and shredded cheese in the baking dish.
  • Pour the egg mixture over the top, making sure it spreads evenly.
  • Bake for 35-45 minutes, or until the center is set and the edges are golden brown.
  • Let it cool for 5 minutes before slicing and serving.

Notes

  • To make ahead, assemble the casserole and refrigerate overnight before baking.
  • For a spicier version, use hot sausage or add jalapeños.
  • Can be frozen for up to 2 months; thaw before baking.
