Preheat & Prep:
Preheat your oven to 350°F (175°C). Grease an 8x8 baking dish with butter or cooking spray.
Mix Wet Ingredients:
In a mixing bowl, whisk together the eggs, cottage cheese, honey, and vanilla until smooth.
Add Dry Ingredients:
Stir in the flour, baking powder, cinnamon, and salt until fully combined.
Fold in Blueberries:
Gently fold in the blueberries, being careful not to crush them.
Pour & Bake:
Pour the batter into the prepared baking dish and spread it evenly. Sprinkle extra blueberries on top.
Bake to Perfection:
Bake for 35-40 minutes or until the top is golden brown and the center is set. If it browns too fast, cover loosely with foil.
Cool & Serve:
Let it cool for a few minutes before slicing. Serve warm with honey, yogurt, or extra blueberries!
