Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 2 large eggs
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • ½ cup all-purpose or oat flour or almond flour for gluten-free
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • A pinch of salt
  • 1 cup fresh or frozen blueberries

Instructions
 

  • Preheat & Prep:
  • Preheat your oven to 350°F (175°C). Grease an 8x8 baking dish with butter or cooking spray.
  • Mix Wet Ingredients:
  • In a mixing bowl, whisk together the eggs, cottage cheese, honey, and vanilla until smooth.
  • Add Dry Ingredients:
  • Stir in the flour, baking powder, cinnamon, and salt until fully combined.
  • Fold in Blueberries:
  • Gently fold in the blueberries, being careful not to crush them.
  • Pour & Bake:
  • Pour the batter into the prepared baking dish and spread it evenly. Sprinkle extra blueberries on top.
  • Bake to Perfection:
  • Bake for 35-40 minutes or until the top is golden brown and the center is set. If it browns too fast, cover loosely with foil.
  • Cool & Serve:
  • Let it cool for a few minutes before slicing. Serve warm with honey, yogurt, or extra blueberries!

Notes

  • If using frozen blueberries, toss them in a little flour first to prevent excess moisture.
  • For a smoother texture, blend the cottage cheese before mixing.
  • To store, refrigerate for up to 5 days or freeze for up to 3 months.
